Instructions
-
Prepare the Curry Paste: Blend all ingredients for the red curry paste until smooth, creating a thick paste-like consistency.
-
Cook the Paste: Heat a pan over medium heat. Add the blended curry paste and sauté without adding any oil. Gradually add 3 tablespoons of coconut milk, stirring until fragrant.
-
Add Aromatics: Stir in the kaffir lime leaves and mix well. Pour in the remaining coconut milk, stirring continuously until it starts to gently boil.
-
Add Vegetables: Once boiling, add the chayote and carrots. Reduce the heat and gently fold in the tofu to prevent it from breaking. Add the water gradually.
-
Simmer: Cook until the chayote and carrots are tender yet still crisp, about 12-15 minutes. Stir occasionally to prevent sticking.
-
Finish the Dish: Once the vegetables are cooked, add the mushrooms, fish sauce, palm sugar, and Thai chili paste. Adjust the flavors to your liking.
-
Garnish and Serve: Finally, add the basil or coriander leaves. Cook for a minute longer and serve hot, savoring the delightful combination of flavors! Enjoy! 😋
