Ingredients

Tomato (cut as desired) 2 pieces
Bird’s eye chili 25 pieces (10 crushed, 15 whole)
Red chili 3 pieces
Shallots 6 cloves
Garlic 6 cloves
Lime 1 piece
Kaffir lime leaves 3 leaves
Lemongrass 2 stalks
Galangal 1 thumb-sized piece
Turmeric 1 thumb-sized piece
Ginger 1 thumb-sized piece
Green onion 5 stalks
Water 1 liter
Salt to taste
Granulated sugar to taste

Instructions

  1. Prepare the Fish: Clean the patin fish thoroughly and marinate with lime juice.
  2. Make the Spice Paste: Blend the bird’s eye chili, shallots, garlic, turmeric, ginger, and kaffir lime leaves into a smooth paste.
  3. Crush the Aromatics: Lightly crush the galangal and lemongrass.
