Tuna with Lemon Basil Sauce
Ingredients:
- 1 can of tuna in brine (I used the “Ayam” brand)
- 2 green tomatoes, diced
- 1-inch piece of ginger, smashed
- 1-inch piece of galangal, smashed
- 10 Thai bird chilies (or to taste), sliced on the diagonal
- 6 shallots, thinly sliced
- 5 cloves of garlic, thinly sliced
- ½ medium onion, finely chopped
- ¼ small bunch of scallions, chopped
- 2 handfuls of basil leaves
- Salt to taste
- Sugar to taste
- 1 tablespoon lime juice
- A splash of cooking oil for sautéing

Prepare the Tuna: Open the can of tuna and drain it well. Transfer the tuna to a plate and gently flake it with a fork, breaking up any large chunks.

Sauté the Aromatics: Heat a splash of cooking oil in a skillet over medium heat. Add the chopped onion and cook until it begins to soften. Next, add the sliced shallots, garlic, and Thai bird chilies. Sauté until the shallots and garlic are golden and fragrant.

Add Ginger and Galangal: Introduce the smashed ginger and galangal into the skillet. Season with a pinch of sugar and salt. Stir everything together until well mixed and slightly softened.

Incorporate the Tomatoes and Scallions: Add the diced green tomatoes and chopped scallions to the skillet. Cook until the tomatoes start to break down and the mixture is well combined.

Combine with Tuna: Gently fold the flaked tuna into the skillet, mixing thoroughly with the aromatic mixture. Continue cooking until the tuna is heated through and begins to slightly brown.

Finish with Basil and Lime: Add the fresh basil leaves and stir until they are wilted and fragrant. Drizzle in the lime juice and mix well. Taste and adjust the seasoning with salt and sugar if needed.
