Ingredients:
- 1/2 kg beef skin (kikil sapi)
- 3 cloves garlic
- 3 shallots
- 1 thumb-sized turmeric
- 1 tomato
- 1 large red chili
- 1 large green chili
- 2 bay leaves
- 1 stalk lemongrass
- Water, as needed
- Oil, for sautéing
- Salt, to taste
- Seasoning, to taste

Instructions:

Prepare the Beef Skin:
Begin by thoroughly cleaning the beef skin. Boil it in water for approximately 10 minutes. Once boiled, drain and rinse the beef skin thoroughly, then set aside to dry. -
Prepare the Spice Paste:
In a blender or food processor, combine the shallots, garlic, and turmeric. Blend until you achieve a smooth paste. Set aside. -
Prepare Vegetables and Aromatics:
Slice the tomato and both types of chili. Lightly crush the lemongrass and bay leaves to release their flavors. -
Sauté the Spice Paste:
Heat a generous amount of oil in a pan over medium heat. Add the spice paste and sauté until fragrant and golden. -
Add Tomatoes and Chilies:
Add the sliced tomato and chilies to the pan. Stir well and cook for a few minutes until the tomato softens. -
Add Water and Aromatics:
Pour in about half a glass of water, then add the crushed bay leaves and lemongrass. Stir to combine. -
Cook the Beef Skin:
Add the pre-boiled beef skin to the pan. Pour in enough water to cover the beef skin. Season with salt, seasoning, and a pinch of sugar. Stir well and bring to a boil. -
Simmer and Reduce:
Reduce the heat to low and let the mixture simmer, occasionally stirring, until most of the water has evaporated and the beef skin is well-coated with the flavorful sauce. -
Finish and Serve:
Once the sauce has thickened and the beef skin is tender, remove from heat. Serve hot with steamed rice. -
