Zucchini and Carrot Noodles with Tuna and Cherry Tomatoes

Canned Tuna in Olive Oil 150g
Carrots 200g
Zucchini 200g
Cherry Tomatoes 140g
Extra Virgin Olive Oil 20g

Instructions

  1. Begin by preparing the carrots: wash them thoroughly, then trim off the ends. Use a vegetable peeler to peel the skin off the carrots, and keep the peel aside.
  2. Continue to use the peeler to create thin strips of carrot. Lay two strips of carrot on top of each other and fold them over. Cut them into thin strips to form noodles. Repeat this step for all the carrots.
  3. Now, move on to the zucchini. Wash the zucchini thoroughly and slice them into long, thin noodles using the same technique as the carrots. Set both the carrot and zucchini noodles aside in a large bowl.
  4. Next, prepare the cherry tomatoes. Rinse them well, then slice them into quarters to create small wedges.
  5. Add the cherry tomato wedges into the bowl with the zucchini and carrot noodles. Sprinkle with a pinch of salt to season.
  6. Open the canned tuna and drain off any excess oil or liquid. Add the tuna to the bowl with the vegetables, then gently mix everything together to ensure the flavors are well distributed.
  7. Drizzle the extra virgin olive oil over the salad and give it another mix to coat everything evenly.
  8. Finally, taste and adjust the seasoning, adding more salt if needed.
