Instructions

Step 1: Prepare the Crumble

  1. Begin by preparing the crumble crust. In a large mixing bowl, combine the all-purpose flour, instant yeast, salt, and grated Parmigiano Reggiano.
  2. Add the cold butter, cut into small pieces. Using your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Crack the egg into the bowl and mix gently, continuing to work the dough until it starts to come together in small clumps or crumbs. Be careful not to overwork it.
  4. Once the dough has formed into rough crumbs, set it aside for later.

Step 2: Cook the Zucchini

  1. Wash the zucchinis thoroughly, then trim off the ends. Slice them into thin rounds or small pieces, depending on your preference.
  2. Heat a splash of extra virgin olive oil in a large pan over medium heat. Once hot, add the zucchini to the pan.
