Soft Zucchini and Smoked Salmon Tart

Instructions

  1. Prepare the batter: In a mixing bowl, beat the eggs with a pinch of salt using a whisk. Add the sunflower seed oil, followed by the whole milk, and whisk again until combined.

  2. Add dry ingredients: Gradually incorporate the all-purpose flour and instant baking powder, mixing well until the batter is smooth and free of lumps. You should achieve a creamy and well-blended batter.

  3. Prepare the tart pan: Grease the tart pan lightly with butter or oil. Pour the batter into the pan, smoothing it out evenly with a spatula.

  4. Cook the tart base: Heat a skillet with a drizzle of extra virgin olive oil. Once the oil is hot, pour in the batter and cook over medium heat until the base sets and becomes golden. After cooking, remove from the pan and let cool slightly.
