Instructions

  1. Preheat Oven 🌡️: Preheat your oven to 400°F (200°C).

  2. Prepare Puff Pastry: On a lightly floured surface, unfold the puff pastry sheet. Cut the pastry on a fold line to remove one 9-inch by 3-inch strip, then set it aside for now. With a floured rolling pin, roll the remaining larger piece of pastry into a rectangle, aiming for about 14 inches by 8 inches. Carefully transfer this rolled-out pastry to a large cookie sheet.

  3. Trim and Shape: Using a sharp knife, trim the pastry to make straight edges. On another floured surface, roll the remaining pastry strip into a 16-inch by 3-inch rectangle. Fold it in half to form an 8-inch by 3-inch rectangle, then cut lengthwise into 3 equal strips. Gently unfold these strips.

  4. Assemble the Tart Shell: Moisten the edges of the pastry on the cookie sheet using your finger dipped in water. Place one pastry strip on each long side of the rectangle, trimming to fit as needed. Then, cut the remaining pastry strip crosswise into halves and place each half along the short sides of the rectangle, overlapping the strips on the long sides. Using a rolling pin, lightly roll over the dough to seal the edges.

  5. Prep for Baking: Using a fork, prick the dough rectangle (inside the strips) at 1/4-inch intervals. This helps prevent the pastry from puffing up too much during baking.

  7. Prepare the Filling: While the tart shell is cooling, mix the light cream cheese, heavy cream, sugar, and 1 tablespoon of the orange liqueur together in a small bowl. Use a spoon or fork to create a smooth mixture, though don’t worry if there are a few small lumps of cream cheese remaining.

  8. Fill the Tart Shell: Spread the creamy filling evenly into the cooled pastry shell, ensuring a nice, even layer.

  9. Arrange the Fruit: Now comes the fun part! You have the freedom to arrange your fruit however you like, but here’s a suggestion: make rows of fruit down the long side of the tart. Consider a row of grapes, followed by a row of kiwis, and then a row of strawberries. Get creative!
