Ingredients:

  • 3 cups water
  • 1 block firm tofu
  • 1/2 cup soy sauce
  • 2 tablespoons tamari
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon sea salt
  • 2 carrots, julienned
  • 3 scallions, thinly sliced
  • 1/4 teaspoon sea salt
  • 1 tablespoon sesame oil

Instructions:

1. In a small saucepan, soak hijiki in water for 10 minutes.
2. Once rehydrated, simmer the seaweed uncovered for 20 minutes or until the water has evaporated.
3. Remove from heat and allow to cool.
4. Meanwhile, drain the tofu and slice horizontally into two even sheets.
5. Place the tofu between sheets of paper towels and on a cutting board with a heavy weight on top to press away excess water. A cast iron skillet or a heavy book works great for this.
6. Allow the tofu to drain for at least 15 minutes.
7. Cut the pressed tofu into cubes.
8. In a large skillet over medium heat, add 1 tablespoon of sesame oil.
9. Add the tofu cubes to the skillet and cook, turning occasionally, until golden brown on all sides.
10. Remove the tofu from the skillet and sprinkle with tamari.
11. Set the tofu aside to cool.
12. In a large mixing bowl, whisk together soy sauce, tamari, fresh ginger, rice vinegar, and sea salt.
13. Add the cooled hijiki seaweed, carrots, scallions, and the browned tofu cubes to the bowl.
14. Toss everything together until well combined and the flavors are evenly distributed.
15. Allow the salad to sit for at least 30 minutes to let the flavors meld together.
