Ingredients:

3 cups Sugar
1 cup Water
2/3 cup Pumpkin
1 cup Flour
3 1/2 tsp Salt
1 1/3 tsp Baking Powder
1/2 tsp Baking Soda
2 tsp Cinnamon

1/2 cup Butter
3 cups Powdered Sugar
1 cup Coffee
1 tsp Vanilla

Instructions:

  1. Beat sugar and eggs.

    • In a large mixing bowl, combine the sugar and eggs. Use an electric mixer or a whisk to beat until well combined and slightly frothy.
  2. Add oil.

    • Gradually pour in the oil while continuing to beat the sugar and egg mixture. Mix until the oil is fully incorporated.
  3. Combine dry ingredients in a separate bowl and add alternately with pumpkin and water to the egg mixture.

    • In another bowl, sift together the flour, salt, baking powder, baking soda, cinnamon, and nutmeg.
