Instructions:

  1. Prepare Jalapeño Ice:

    • Begin by cutting the stems off six whole fresh jalapeño peppers and removing the seeds.
    • Finely chop the jalapeño peppers, ensuring to remove the ribs.
    • Place the chopped jalapeños in a saucepan and cook over low heat for 5-10 minutes until they become fragrant.
    • Pour in the water and increase the heat to medium-high. Allow the mixture to simmer for 30 minutes, infusing the water with the jalapeño flavor.
    • Optionally, add a few drops of green food coloring to enhance the appearance of the ice.
    • Remove the jalapeño mixture from the heat and transfer it to a shallow container or glass dish.
    • Place the container in the freezer and allow the mixture to freeze until it reaches a slushy consistency.
  2. Assemble Oyster Shooters:

    • Once the jalapeño ice is ready, use a melon baller to scoop out small ice balls.
    • Place one ice ball in each shot glass.
    • Shuck the fresh oysters and place one oyster on top of each ice ball in the shot glasses.
    • Add a dash of Tabasco sauce on each oyster to add a spicy kick.
    • Serve the oyster shooters immediately while the jalapeño ice is still slushy.

Serving Suggestions:

Note: Preparation time does not include freezing time for the jalapeño ice. 🌶️🍤🥂
