Ingredients:

  • 12 small new potatoes
  • 4 garlic cloves
  • 2 tablespoons fresh parsley, chopped
  • 3 teaspoons lite olive oil
  • Salt and pepper, to taste

Instructions:

  1. Prepare Potatoes:

    • Scrub the potatoes well under running water to remove any dirt or debris.
    • Using a paring knife, carefully peel a 3/4-inch strip around the middle of each potato. This step is optional but adds a contrast in color.
  2. Cook Potatoes:

    • Place the prepared potatoes in a saucepan and cover them with water.
    • Bring the water to a boil over medium-high heat.
    • Reduce the heat to medium-low and simmer the potatoes, covered, for about 20 minutes or until they are tender when pierced with a fork.
    • Once cooked, drain the potatoes and transfer them to a large bowl.
  3. Season Potatoes:

    • Add two teaspoons of olive oil to the bowl of cooked potatoes. Gently toss the potatoes until they are evenly coated with the oil.
  4. Prepare Garlic and Parsley Mixture:

    • In a non-stick frying pan, heat the remaining teaspoon of olive oil over medium heat.
    • Add the minced garlic to the pan and cook for approximately 1 minute, stirring constantly to prevent burning.
    • Add the chopped fresh parsley to the pan, along with salt and pepper to taste. Mix well to combine all the ingredients.
  5. Combine and Cook:

    • Carefully add the seasoned potatoes to the frying pan with the garlic and parsley mixture.
    • Reduce the heat to low and cook, stirring constantly, for 1 to 2 minutes to allow the flavors to meld together and the potatoes to absorb the garlic and parsley flavors.
  6. Serve:

    • Once the potatoes are heated through and evenly coated with the garlic and parsley mixture, remove the pan from the heat.
    • Transfer the potatoes to a serving dish and serve immediately as a delicious side dish.

Enjoy these flavorful Garlic & Parsley New Potatoes as a wonderful accompaniment to any meal!
