Instructions:

Part 1:

  1. Combine lean beef, water, salt, onions, carrots, turnip, mace, cinnamon stick, thyme, marjoram, summer savory, and bay leaves in a large oven-safe pot.
  2. Cook in a slow oven for 12 hours.
  3. Strain the mixture and allow it to cool. Then strain again to obtain a clear consommé.
  4. Measure 2 quarts of consommé and freeze the rest for later use.

Part 2:

  1. In a food processor, combine ground pork, beef, onion, salt, pepper, allspice, flour, milk, and eggs.
  2. Puree the mixture until very smooth.
  3. Transfer the mixture into a medium bowl, cover, and let it stand for 1 hour.
  4. Use a teaspoon to form 40 small, oval meatballs with your hands.
  5. Bring 2-3 inches of salted water to a boil in a skillet.
  6. Boil the meatballs for 5-6 minutes, then plunge them into cold water and drain.
  7. Repeat the boiling process until all meatballs are cooked. Set aside.

Part 3:

  1. In a pot, combine butter, water, and salt. Bring to a boil.
  2. Add flour to the boiling mixture and stir vigorously until a dough forms a ball and pulls away from the sides of the pot.
  3. Remove from heat and let it stand for about 10-12 minutes.
  4. Add eggs one at a time, stirring well after each addition.
  5. Use the same method as for meatballs to make 40 small dumplings.
  6. Boil the dumplings in salted water for around 7-8 minutes.
  7. Remove from water and drain. Set aside.

Part 4:

  1. In a large pot, bring the consommé to a boil.
  2. Add vegetables, meatballs, and dumplings to the pot.
  3. Return to a boil, then reduce the heat and simmer until the meatballs and dumplings are heated through.
