Description:

This delightful dish, a cherished gem in potluck gatherings, never fails to captivate taste buds. Its origins trace back to the revered Company’s Coming cookbook series, tweaked and perfected over time. An amalgamation of hearty red kidney beans, succulent crushed pineapple, and savory bacon, adorned with a symphony of flavors from ketchup, mustard, brown sugar, and Worcestershire sauce, this culinary masterpiece embodies simplicity and satisfaction in every bite. It’s a culinary voyage to the tropics, right from the comfort of your kitchen.

Ingredients:

  • 1 onion
  • 1 can red kidney beans
  • 1 can crushed pineapple
  • 1/3 cup ketchup
  • 1 tablespoon mustard
  • 1/2 cup brown sugar
  • 4 slices bacon
  • 1 tablespoon Worcestershire sauce

Instructions:

Step Description
1 Preheat your oven to 350°F (175°C). Spray a medium-sized pot with non-stick spray.
2 In a skillet over medium heat, add just enough oil to barely cover the bottom. Add the diced onions and sauté slowly until they are just soft and fragrant.
3 Transfer the sautéed onions to a medium-sized casserole dish.
4 To the casserole dish, add the drained red kidney beans, crushed pineapple (with its juice), ketchup, mustard, brown sugar, and Worcestershire sauce. Stir gently to ensure all ingredients are evenly mixed.
5 Lay the bacon slices on top of the bean mixture.
6 Bake the dish, uncovered, in the preheated oven for approximately 1 1/2 hours, or until the mixture is bubbly and the bacon is crispy, stirring once or twice during baking to ensure even cooking.
7 Once done, remove from the oven and let it cool slightly before serving. Enjoy the tropical flavors of this delightful dish!
