Ground Beef & Cabbage Stew 🥘
Description: One day I made this stew for myself (God forbid the kids ever put cabbage in their mouths) They (the kids) accidentally ate it mistaking it for my beef stew. They called me on my cell phone and told me that was the best stew I had ever made. I just let it be my little secret about cabbage.

Quantity | Ingredient |
---|---|
2 tbsp | Olive oil |
1 | Red onion |
1/2 | Cabbage |
14 oz | Stewed tomatoes |
6 | Carrots |
2 | Green pepper |
1 sprig | Thyme |
1/2 cup | Vegetable broth |
1 can | Corn |
1 can | Green beans |
1 lb | Lean ground beef |
1 tbsp | Chili powder |
1 tsp | Cumin |
Instructions:
-
Brown Ground Beef: In a skillet, brown the lean ground beef over medium heat until fully cooked. Drain any excess fat and set aside.
-
Sauté Onion: Heat olive oil in the same skillet over medium heat. Add the diced red onion and cook for 2-3 minutes, until translucent and fragrant.
-
Combine Ingredients: To the skillet, add the shredded cabbage, stewed tomatoes, diced potatoes, sliced carrots, chopped green pepper, and thyme sprig. Mix well to combine all the ingredients.
-
Add Broth: Pour in the vegetable broth, stirring to incorporate it with the other ingredients. Allow the mixture to come to a gentle boil.
-
Simmer: Once boiling, reduce the heat to low. Cover the skillet and let the stew simmer for 20 minutes, allowing the flavors to meld together.
-
Incorporate Corn and Beans: After 20 minutes, uncover the skillet and stir in the canned corn and green beans. Recover the skillet and continue to cook for an additional 15 minutes.
-
Serve: Once the vegetables are tender and the flavors have developed, remove the skillet from heat. Serve the ground beef and cabbage stew hot, garnished with fresh herbs if desired.
This hearty stew is not only packed with flavor but also sneaks in some healthy cabbage, much to the surprise and delight of those who may typically avoid it. Enjoy the wholesome goodness of this one-dish meal, perfect for lunch or a quick weeknight dinner!
