Ingredients:

  • 1 lb lean ground beef
  • 2 onions
  • 3 garlic cloves
  • 1 3/4 cups celery, chopped
  • 8 oz fresh mushrooms, sliced
  • 8 oz sliced water chestnuts
  • 12 oz fresh bean sprouts
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp cornstarch
  • 2 tbsp soy sauce

Instructions:

Step Description
1 Preheat your oven to 350°F (175°C).
2 In a skillet over medium heat, cook the ground beef until it’s browned and crumbly.
3 Transfer the cooked beef into a 2 1/2 quart casserole dish.
4 If there’s excess grease in the skillet, pour it off.
5 Add the chopped onions, minced garlic, chopped celery, and sliced mushrooms to the skillet. Sauté until the vegetables are cooked but still crisp.
6 Add the sautéed vegetables to the casserole dish with the cooked beef.
7 Fold in the sliced water chestnuts, fresh bean sprouts, and diced tomatoes (including the juice) into the mixture.
8 In a small bowl, blend the cornstarch with the soy sauce until smooth. Then, stir it into the mixture in the casserole dish.
9 Top the casserole with chow mein noodles.
10 Bake the casserole uncovered in the preheated oven for 45 minutes to 1 hour, or until it’s bubbly and the noodles are crispy.
11 Serve the Budget Beef & Mushroom Casserole hot, with your choice of cooked rice or mashed potatoes.
