Ingredients:

  • 3/4 cup butter
  • 1 cup butter
  • 1 1/2 cups caster sugar

  • 1 cup sugar
  • 1/2 cup water

Instructions:

  1. Preheat oven: Preheat your oven to 180ยฐC (350ยฐF).

  2. Prepare the pan: Spray a 20cm ring tin (tube pan) with non-stick spray.

  3. Cream the butter and sugar: In a large mixing bowl, cream together the 3/4 cup of butter and 1 1/2 cups of caster sugar until light and fluffy.

  4. Add orange rind: Mix in the fresh orange rind until well incorporated.

  5. Add eggs: Add the eggs one at a time, beating well after each addition.

  6. Mix yogurt and orange juice: In a separate bowl, mix together the plain yogurt and fresh orange juice.

  7. Combine wet and dry ingredients: Gradually add the yogurt and orange juice mixture to the butter mixture, blending well.

  8. Transfer to pan: Pour the batter into the prepared ring tin (tube pan), spreading it evenly.

  9. Bake: Place the tin in the preheated oven and bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.

  10. Cool: Allow the cake to cool in the tin for 5 minutes, then carefully turn it out onto a wire rack to cool slightly.

  11. Prepare the sauce: In a saucepan, combine the ingredients for the sauce – fresh orange juice, sugar, and water.

  12. Boil the sauce: Bring the sauce to a boil over medium heat, then reduce the heat and simmer for 5 minutes, stirring occasionally.

  13. Pour over the cake: While the sauce is still hot, pour it evenly over the warm cake, allowing it to soak in.
