Ingredients:
- 3-5 lbs of beef (suitable for a roast)
- 1 teaspoon salt (optional)
Instructions:
- Select meat suited for a roast. Ensure the beef is of high quality and suitable for canning purposes.
- Trim and wipe with a damp cloth. Remove any excess fat or undesirable parts from the beef. Clean it thoroughly with a damp cloth.
- Cut into pieces. Depending on your preference, cut the beef into chunks or slices suitable for canning.
- Pack loosely to within 1 inch of the top of the jar. Fill the canning jars with the prepared beef, leaving some space at the top to allow for expansion during processing.
- Add 1 teaspoon salt to each quart jar if desired. If you prefer your beef seasoned, add salt to taste to each quart jar.
- DO NOT ADD LIQUID. It’s important not to add any liquid to the jars before processing.
- Put on cap, screwing band FIRMLY TIGHT. Securely seal the jars with their lids, ensuring they are tightly closed to prevent any leaks during processing.
- Process using 10 pounds pressure. Follow the pressure canning instructions specific to your canner, ensuring it reaches and maintains the appropriate pressure.
- Pints for 75 minutes, Quarts for 90 minutes. Process pint-sized jars for 75 minutes and quart-sized jars for 90 minutes to ensure safe canning of the beef.
