Cider vinegar 1/4
Fresh ground black pepper 1/2
Catsup 2 1/2
Worcestershire sauce 1/2
Lemon juice 6 – 8

Instructions:

  1. Place the chicken in a plastic bag set in a shallow dish.
  2. For the marinade, stir together 3 tablespoons of lemon juice, cooking oil, salt, 1/2 teaspoon of black pepper, and garlic.
  3. Pour the marinade over the chicken.
  4. Close the bag and marinate in the refrigerator for up to 24 hours, turning often.
  5. In a saucepan, combine water, onion, sugar, butter, mustard, vinegar, and 1/2 teaspoon of pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer uncovered for 20 minutes.
  7. Stir in catsup, Worcestershire sauce, 6 to 8 tablespoons of lemon juice, and red pepper.
  8. Return the sauce to a boil, then reduce heat and simmer uncovered for 50 to 60 minutes or until reduced to about 4 cups.
  9. Meanwhile, drain the chicken, discarding the marinade.
  10. In a grill with a cover, arrange preheated coals around a drip pan.
  11. Test for medium heat above the pan.
  12. Place the chicken, bone side down, on the grill rack over the drip pan.
  13. Cover and grill for 50 to 60 minutes or until the chicken is done (170 degrees for breast meat and 180 degrees for thighs and legs), brushing often with barbecue sauce during the last 10 minutes of grilling.
  14. To serve, pass additional barbecue sauce with the chicken.
