  1. Using a food processor fitted with a metal blade, pulse the garlic and shallot until finely chopped.
  2. Add the papaya to the processor and pulse until it is also finely chopped.
  3. Next, add in the vegetable broth, fresh lemon juice, dried thyme, mustard powder, reduced sodium soy sauce, and pepper. Puree the mixture until it is smooth and well combined.
  4. Place the chicken breasts in a large zip lock bag and pour the marinade over them, ensuring they are evenly coated. Seal the bag and refrigerate, turning the chicken occasionally to ensure it is evenly marinated. Allow it to marinate for at least 4 hours, or preferably overnight for the best flavor infusion.
  5. After marinating, remove the chicken breasts from the bag, allowing any excess marinade to drip off.
  6. Preheat your oven to 350ยฐF (175ยฐC).
  7. Place the marinated chicken breasts into a Dutch oven or heavy casserole dish, without the lid.
  8. Pour the remaining marinade over the chicken, ensuring each breast is coated evenly with approximately a 1/4 inch of marinade.
  9. Place the dish in the preheated oven and bake for approximately 30 minutes, or until the chicken is cooked through and no longer pink in the center.
  10. Once done, remove from the oven and let it rest for a few minutes before serving.
