Recipe: Asparagus Souffle 🌱

Asparagus brightens any dinner table…especially a souffle. I would use this as a main course, but it can just as easily be a side. For the main course serve with a salad and bread.

Ingredients:
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 4 eggs, separated
- 2 1/2 cups chopped asparagus
- 3/4 teaspoon salt
Instructions:

Preheat the Oven: Preheat your oven to 325°F (165°C). Grease a casserole dish.

Prepare the Asparagus Mixture:
- In a saucepan, blend butter and flour over medium heat until smooth.
- Gradually add milk, stirring constantly until thickened.
- Remove from heat.

Beat the Egg Yolks:
- In a separate bowl, beat egg yolks until thick and lemon colored.

Combine Ingredients:
- Add chopped asparagus and salt to the egg yolks.
- Stir the mixture into the saucepan with the thickened milk mixture.

- In another clean bowl, beat egg whites until stiff peaks form.

Fold Egg Whites:
- Gently fold the stiff egg whites into the asparagus mixture until well combined.

- Pour the mixture into the greased casserole dish.
- Place the casserole dish in a larger pan filled with hot water (about halfway up the sides of the casserole dish).
- Bake in the preheated oven for about 45 minutes, or until the souffle is puffed and golden brown on top.
