Rosti-Topped Sausages and Garlicky Cabbage Recipe

Ingredients:

For the Sausage Mixture:
  • 1 yellow onion
  • 1 garlic clove
  • 2 tomatoes
  • 1 cup water
  • 1/2 cup dry red wine
  • 1/2 cup tomato paste
  • 2 teaspoons dried basil
  • 1 tablespoon fresh parsley
  • 2 sausages
For the Rosti Topping:
  • 1 potato
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon sweet paprika
For the Garlicky Cabbage:
  • 30g butter
  • 750g cabbage
  • 2 garlic cloves
  • 1/2 cup dry white wine
  • Fresh chives for garnish

Instructions:

  1. Cook the Sausages:

    • In a large heated pan, cook the sausages in batches until they are browned all over.
    • Once cooked, drain them on a paper towel and then slice them thickly.
  2. Prepare the Sausage Mixture:

    • Discard the fat in the pan, then add the chopped onion and minced garlic. Cook until the onion is soft.
    • Return the sliced sausages to the pan along with undrained crushed tomatoes, water, red wine, tomato paste, dried basil, and fresh parsley.
    • Bring the mixture to a boil, then reduce the heat and simmer uncovered for about 10-15 minutes until the mixture thickens.
  3. Assemble and Bake:

    • Transfer the sausage mixture to a shallow 3-liter ovenproof dish. At this stage, you can refrigerate or freeze it for later use.
    • Prepare the Rosti topping by boiling, steaming, or microwaving the potatoes until just tender. Drain and cool them, then coarsely grate them into a large bowl. Combine with the shredded cheddar cheese.
    • Spread the Rosti topping over the sausage mixture in the dish, sprinkle with sweet paprika, and bake in a moderately hot oven for about 30 minutes or until browned.
  4. Make the Garlicky Cabbage:

    • While the dish is baking, melt butter in a large pan over medium heat. Add shredded cabbage and minced garlic, then pour in the dry white wine.
    • Stir the cabbage mixture occasionally until the cabbage is just tender.
    • Just before serving, stir in fresh chives for added flavor.
  5. Serve:

    • Serve the Garlicky Cabbage alongside the sausage and rosti dish, and enjoy this comforting and hearty meal.
