Kuure-ed Chicken (A Yooper-Inspired Recipe)
Description: Inspired by a conversation with my diet buddy Yooper, this curried chicken recipe is perfect for Somersizing or as a flavorful dish with Basmati rice. Marinating time is included in prep time, while cook time does not account for the crockpot option.

Ingredients:

2 | Boneless skinless chicken thighs |
8-12 | Garlic cloves |
2 tsp | Ground ginger |
1 1/2 tsp | Cayenne pepper |
2 tsp | Ground coriander |
1 tsp | Ground cumin |
3/4 tsp | Ground cardamom |
2 tsp | Ground cinnamon |
1 tsp | Salt |
8 tbsp | Vinegar |
2 tsp | Peppercorns |
6 | Bay leaves |
Instructions:
- Place the chicken pieces in a large Ziploc bag.
- In a blender, combine the garlic, ground ginger, cayenne pepper, ground coriander, ground cumin, ground cardamom, ground cinnamon, salt, and vinegar. Blend for about 30 seconds until well combined.
- Add the marinade to the Ziploc bag with the chicken.
- Seal the bag, removing any excess air, and knead it gently to ensure the meat is evenly coated with the marinade.
- Refrigerate the bag for 18 to 24 hours to allow the flavors to meld.
- After marinating, transfer the chicken and marinade to a large pot over low heat.
- Add the whole peppercorns and bay leaves to the pot.
- Simmer the chicken for at least 2 hours, allowing the flavors to develop and the chicken to become tender.
- Alternatively, you can cook the chicken in a crockpot on high for 6 hours for a hands-off approach.
