Instructions:
- In a 2-quart or larger pan, combine the dark beer, cornmeal, and dark molasses.
- Bring the mixture to a boil over high heat, then remove from heat and let it cool to 110Β°F (about 43Β°C).
- In a large bowl, sprinkle the dry active yeast over warm water and let it stand for 5 minutes until foamy.
- Stir in the beer mixture, canola oil, salt, and rye flour until well blended.
- Gradually stir in 3 1/2 cups of all-purpose flour until a smooth dough forms.
- Knead the dough on a floured surface until it becomes smooth and elastic, about 15 minutes by hand or 10 minutes using a dough hook.
- Place the dough in a greased bowl, turning it once to coat it with oil. Cover the bowl with plastic wrap and let it rise in a warm place until doubled in size, approximately 1 to 1 1/2 hours.
