Description:
Indulge in the ultimate comfort food with this delectable dish. The sauce, with its lighter touch, offers flexibility, allowing you to opt for minimal butter or heavy cream. Skim milk works wonders here, offering richness without the guilt. Feel free to get creative with your vegetable choices; asparagus or artichoke hearts make delightful substitutions. Look for a “family size” package of ravioli for convenience, or use two smaller packages.

Ingredients:

  • 2 cups frozen chopped spinach
  • 1 tablespoon olive oil
  • 4-6 garlic cloves
  • 1 1/2 – 2 cups broccoli
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups skim milk
  • 2 tablespoons parmigiano-reggiano cheese
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups mozzarella cheese

Instructions:

  1. Preheat and Prep:

    • Preheat broiler or oven to 500°F.
    • Bring a large stockpot of water to a boil.
  2. Prepare Vegetables:

    • Steam broccoli for about 5 minutes until bright green and slightly tender.
  3. Sauté Vegetables:

    • While water heats up, heat a large skillet over medium heat.
    • Add olive oil and chopped garlic, sauté for about 1 minute.
    • Add drained spinach and steamed broccoli to the skillet.
    • Toss vegetables well with garlic oil to coat evenly.
    • Sauté for about 5 minutes.
    • Season with salt and pepper, then transfer to a bowl and set aside.
  4. Prepare Sauce:

    • In the same skillet, melt butter and whisk in flour.
    • Cook for about 1-2 minutes.
    • Add stock and whisk continuously until it boils.
    • Slowly whisk in milk and parmesan cheese.
    • Let the mixture bubble for about 2 more minutes until thickened.
    • Season the sauce with nutmeg, salt, and pepper.
  5. Cook Ravioli:

    • When the pasta water is boiling, add salt and ravioli.
    • Cook for about 4-5 minutes until slightly underdone.
    • The ravioli will finish cooking with the sauce under the broiler.
  6. Assemble and Bake:

    • Place a thin layer of white sauce in an oven-proof casserole dish.
    • Drain the ravioli.
    • Layer half of the ravioli in the baking dish.
    • Add half of the broccoli/spinach mixture.
    • Cover the first layer with a couple of ladles of sauce, using a little more than half.
    • Add the remaining vegetable mixture, then the remaining half of the ravioli.
    • Spoon the remaining sauce over the top, using a little less than half.
    • Top with grated cheese of your choice.
  7. Broil or Bake:

    • Place the casserole dish under the broiler or in the oven, about 8 inches from the element.
    • Broil for about 5 minutes until the cheese melts and is bubbly and starting to brown.

This delightful Ravioli Baked With Broccoli and Spinach is now ready to be served and savored by your loved ones. Enjoy the comforting flavors and the versatility of this dish, perfect for any occasion!
