Salmon Noodle Casserole Recipe 🍽️

Overview:

In the savory world of comforting casseroles, behold the Salmon Noodle Casserole! Inspired by a recipe from the October ’03 issue of Savuer, this dish takes the classic tuna noodle casserole and gives it a flavorful twist with succulent salmon, earthy mushrooms, vibrant peppers, and a creamy, cheesy sauce. Perfect for a cozy winter evening, this dish is easy to prepare and sure to please even the most discerning palates. With a prep time of just 30 minutes and a total cooking time of 45 minutes, it’s a quick and satisfying meal for any occasion.

Ingredients:

  • 2 portabella mushroom caps
  • 8 ounces salmon
  • 1 yellow bell pepper
  • 1 clove garlic
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 5 tablespoons butter (for sauce)
  • 1 cup milk
  • 1 cup cheese (grated)
  • 1/2 teaspoon hot paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Rosemary and oregano (for marinade)
  • Balsamic vinegar (for marinade)
  • 1 cup peas (optional)
  • 8 ounces noodles (of your choice)
  • 1/2 cup breadcrumbs

Instructions:

  1. Preheat Oven: Begin by preheating your oven to 350°F (175°C). This ensures that your casserole will bake evenly to golden perfection.

  2. Prepare Mushrooms: Clean the portabella mushroom caps and make a marinade by combining olive oil, salt, pepper, rosemary, oregano, and a splash of balsamic vinegar. Coat the mushrooms generously with the marinade and place them in a foil-lined pan, stem side up. Pour any remaining marinade over the mushrooms. Bake in the preheated oven until they are soft, approximately 15 minutes.

  3. Cook Noodles: While the mushrooms are baking, bring a pot of water to a boil on the stove for the noodles. Cook the noodles according to the package instructions until they are tender, usually 6-8 minutes. Drain the noodles and set them aside in a large bowl.

  4. Prepare Ingredients: Once the mushrooms are done, remove them from the oven and cut them into large dice. Add them to the bowl with the cooked noodles. If using peas, peppers, or any additional ingredients, add them to the bowl as well, along with the salmon.

  5. Make Sauce: In a medium saucepan, melt 5 tablespoons of butter over medium heat. Add the crushed garlic and sauté for about 30 seconds until fragrant. Then, add the flour and whisk constantly for about 5 minutes until lightly browned. Gradually pour in the milk, stirring constantly until the sauce thickens, which should take approximately 2 minutes. Remove the sauce from the heat and add the grated cheese and hot paprika. Stir until the cheese is melted and the sauce is smooth.

  6. Combine and Bake: Pour the cheese sauce over the noodle mixture and toss to distribute evenly. Transfer the mixture into a buttered casserole dish. In a separate bowl, combine the melted butter and breadcrumbs. Sprinkle the breadcrumb mixture over the top of the casserole.

  7. Bake Casserole: Place the casserole in the preheated oven and bake for 10-15 minutes until the top is golden brown and crispy.

  8. Serve: Once the casserole is done, remove it from the oven and let it cool for a few minutes before serving. Enjoy your delicious Salmon Noodle Casserole!
