Ingredients:

1 1/2 tsp Baking soda
1/2 tsp Salt
3 tbsp Sugar
1/3 cup Butter
1/4 cup Currants
1 Egg
1 1/2 cups Buttermilk
2 tbsp Milk

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Lightly flour a baking sheet.
  3. In a large bowl, combine the flour, baking soda, salt, and sugar.
  4. Add the butter pieces to the flour mixture and cut them in using a pastry blender until the mixture resembles coarse crumbs.
  5. Blend in the currants and make a well in the center of the mixture.
  6. In a small bowl, beat the egg with 1 cup of buttermilk, then pour it into the well in the flour mixture.
  7. Stir the flour mixture until just combined, adding more buttermilk if the dough seems too dry.
  8. Form the dough into a rough ball and knead it 8-10 times until it is well blended.
  9. Roll out the dough to a thickness of 3/4 inch (about 2 cm) and cut it into 2 1/2 inch (6 cm) rounds, being careful not to twist the cutter.
  10. Transfer the rounds to the prepared baking sheet.
  11. Brush the tops of the scones with milk.
  12. Bake in the preheated oven until golden brown, about 15 minutes.
  13. Transfer the scones to a cooling rack and serve warm with clotted cream or whipped cream and preserves.
