Description:
This delightful Ginger and Lemon Loaf fills your kitchen with a wonderful aroma while baking. Perfect for packing in lunch boxes or bringing along to a picnic, this loaf also freezes well, making it a convenient treat to have on hand.
Ingredients:
- 360g cake flour
- 275g caster sugar
- 10g baking powder
- 10g ground ginger
- 3g salt
- Zest of 2 lemons
- 75g butter
- 200ml skim milk
- 1 egg
- 10ml vanilla essence
- 175g applesauce
- Juice of 1 lemon
- Lemon slices (for topping)
Instructions:
-
Preheat the oven to 180ºC (350ºF) and spray a medium-sized loaf pan with non-stick spray.
-
Sift the cake flour, caster sugar, baking powder, ground ginger, and salt together in a large bowl.
-
Stir in the lemon zest.
-
Dice the butter and rub it into the flour mixture until it resembles fine breadcrumbs.
-
In a separate bowl, beat together the skim milk, egg, vanilla essence, lemon juice, and applesauce until well combined.
-
Add the wet ingredients to the flour mixture and mix until smooth.
-
Pour the batter into the prepared loaf pan.
-
Arrange lemon slices on top of the batter.
-
Bake for about 1 hour and 15 minutes, or until a skewer inserted into the center comes out clean. If the top starts to brown too quickly, cover the loaf with aluminum foil after about an hour to prevent burning.
-
Allow the loaf to cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely.
Enjoy this flavorful Ginger and Lemon Loaf with a cup of tea or pack it up for a delicious addition to your next picnic or lunchbox!
