Instructions:
- 
Saute Chicken, Potatoes, and Celery: Heat olive oil in a large pot over medium heat. Add diced chicken breasts, cubed potatoes, and sliced celery. Saute until the potatoes become translucent and the chicken is cooked through, stirring occasionally, about 8-10 minutes.

Sprinkle Soup Mix: Sprinkle the rice mix seasoning packet over the sauteed chicken, potatoes, and celery. Toss until everything is evenly coated with the seasoning mix.

Add Vegetables and Soup: Stir in the frozen mixed vegetables and cream of mushroom soup until well combined. Pour in the chicken broth, ensuring that all ingredients are submerged.

Simmer: Reduce the heat to medium-low and simmer the soup uncovered until the rice is tender, about 15-20 minutes. Stir occasionally to prevent sticking and ensure even cooking.

Add Cream: Once the rice is tender, pour in the half-and-half or cream, stirring continuously. Heat the soup through but do not allow it to boil, as boiling may cause the cream to curdle.
