🥘 Ingredients:

Quantity Ingredient
1 1/2 Butter
1 Olive oil
1 Onion
2 Celery stalks
2 Fresh sage leaves
2 Dry white wine
1/2 Ground pork
1 Fresh parsley
1/2 Celery leaves
1/2 Eggs
3 Bread slices
1 Salt
1/2 Ground nutmeg
1/2 Ground black pepper
1 Low sodium chicken broth

🔪 Instructions:

  1. Preheat your oven to 350°F.
  2. Spread the bread slices on 2 large rimmed baking sheets.
  3. Bake until golden brown, stirring occasionally, for about 30 minutes. Then, transfer them to a large bowl.
  4. Melt butter with olive oil in a heavy large skillet over medium-high heat.
  5. Add onions and celery and sauté until tender, which should take about 8 minutes.
  6. Add fresh sage leaves and sauté for another minute.
  7. Pour in the dry white wine and let it boil until it evaporates, approximately 1 minute.
  8. Add ground pork and cook until browned and cooked through, breaking it up with the back of a fork, for about 4 minutes.
  9. Allow the mixture to cool slightly.
  10. The bread and pork mixture can be prepared 1 day ahead. Cover them separately. Store the bread at room temperature and refrigerate the pork mixture.
  11. Stir the pork mixture, fresh parsley, and celery leaves into the bread cubes.
  12. Whisk eggs, salt, ground nutmeg, and ground black pepper in a medium bowl, then mix them into the stuffing.
  13. To bake the stuffing in a turkey, loosely fill the main turkey cavity with stuffing.
  14. Add enough chicken broth to the remaining stuffing to moisten it lightly, about 1/4 to 1/2 cup, depending on the amount of remaining stuffing.
  15. Generously butter a glass or ceramic baking dish.
  16. Spoon the remaining stuffing into the dish, then cover it with buttered foil, buttered side down.
  17. Bake the stuffing in the dish alongside the turkey until heated through, which takes about 30 minutes.
  18. Uncover the stuffing and bake until the top is just crisp and golden, approximately 15 minutes.
  19. To bake all of the stuffing in a baking dish, preheat your oven to 350°F.
  20. Generously butter a 13x9x2-inch square glass or ceramic baking dish.
  21. Add enough chicken broth to the stuffing to moisten it, about 3/4 cup to 1 1/2 cups, then transfer the stuffing to the prepared dish.
  22. Cover the dish with buttered foil, buttered side down, and bake until heated through, about 30 minutes.
  23. Uncover the dish and bake until the top is crisp and golden, about 20 minutes longer.
