Packed with savory ingredients and layers of deliciousness, it’s perfect for those weeknight dinners when you need something easy and satisfying.

Ingredients:

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Cook Quorn or ground beef with onion and garlic in a skillet until browned and fragrant.

  3. Drain excess fat if using ground beef, then add the can of diced tomatoes, spaghetti sauce, fresh basil, and water to the skillet. Allow the mixture to simmer for about five minutes.

  4. Meanwhile, in another skillet, sauté the fresh spinach in a bit of butter or broth until wilted. Set aside.

  5. In a baking dish, preferably a 10×10 inch or similar size, spread 1/2 cup of the meat sauce to cover the bottom.

  6. Layer lasagna noodles lengthwise over the sauce, overlapping the edges slightly.

  7. Top the noodles with more sauce, a bit of sautéed spinach, and a sprinkle of cheddar cheese.

  8. Repeat the layers until your dish is nearly full or until the sauce starts to run out, ensuring the top layer is noodles.

  9. Save 1/2 cup of sauce to pour over the final layer of noodles.

  10. Sprinkle the top with Parmesan cheese and the remaining cheddar cheese.

  11. Cover the baking dish with foil and bake in the preheated oven for about 40 minutes, or until the lasagna is hot and bubbly and the cheese is melted through.

  12. Turn on the grill and bake for an additional five minutes, or until the cheese is golden brown and deliciously crispy.

  13. Allow the lasagna to stand for five minutes before cutting into generous portions and serving.
