Jalapeno-Pumpkin Seed Quesadillas Recipe

Ingredients:

1 cup fresh parsley leaves
1 1/2 tsp salt
1 1/2 tbsp olive oil
1 jalapeno
1 garlic clove
8 wheat flour tortillas
1 cup low-fat cheddar cheese
1 cup nonfat cheddar cheese
1 chicken breast (optional)
1 firm silken tofu
1 tbsp lemon juice
1/2 tsp fresh ground black pepper
Cooking spray
Roasted Red Pepper Cream (optional)

Instructions:

  1. Prepare Pumpkin Seeds:

    • Toast pumpkin seeds in a dry skillet over medium-high heat until they pop and jump. Set aside to cool.
  2. Make Jalapeno-Pumpkin Seed Paste:

    • In a food processor, finely mince jalapeno and garlic.
    • Add toasted pumpkin seeds, cilantro, parsley, salt, and olive oil to the food processor. Blend until it reaches the consistency of a paste. Set aside.
  3. Assemble Quesadillas:

    • Spread 1/4 of the jalapeno-pumpkin seed paste on a tortilla.
    • Sprinkle with 1/4 of the low-fat cheddar cheese and 1/4 of the nonfat cheddar cheese.
    • Add 1/4 of the chicken, if using.
    • Cover with another tortilla. Repeat with the remaining tortillas and fillings.
  4. Cook Quesadillas:

    • Spray a griddle or heavy skillet with cooking spray and place over medium-high heat.
    • Add a quesadilla. When one side is toasted (about 2 minutes), spray the top tortilla with cooking spray and turn.
    • Continue to cook until the second side is toasted and the cheese melts.
  5. Serve:

    • Cut the quesadillas in half or quarters.
    • Serve with Roasted Red Pepper Cream if desired.

Roasted Red Pepper Cream:

  • Blend together in a food processor or blender 1 cup of firm silken tofu, 1 roasted red bell pepper, 1 tablespoon of lemon juice, 1/2 teaspoon of salt (or to taste), and freshly ground black pepper.
