๐Ÿ Carnivoro Pasta Sauce ๐Ÿ

Description: The name says it all! This is an old-fashioned, long-simmering meaty pasta sauce. Add more meats if you wish, and feel free to experiment with ground meats or any other different ideas you may have, but the pork neckbones and sausage are particular to the flavor of the sauce.

Ingredients:

  • 2 hot Italian sausages
  • 1 beef stew meat
  • 1 1/2 garlic cloves, minced
  • 5 cloves garlic, minced
  • 2 cans (28 ounces each) crushed tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 cups beef broth
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 3 teaspoons pepper

Instructions:

  1. Brown the Meats: In a LARGE pot, brown the pork neckbones in a little olive oil; set aside. Brown hot Italian sausage, then add stew meat and brown; set aside.

  2. Saute Garlic: Pour off some of the grease, then return all meats to the pot, with the 5 cloves of minced garlic; cook garlic briefly with the meats.

  3. Add Tomatoes and Seasonings: Add the two 28 ounce cans of crushed tomatoes, the 6 oz. can of tomato paste, beef broth, oregano, basil, and pepper.

  4. Simmer: Simmer, partly covered (my pot lid has little “vents”), for at least two hours – the longer, the better! Stir occasionally to loosen a little meat from the pork neckbones.

  5. Adjust Seasoning: Add salt to taste; correct seasoning.

  6. Serve: Serve with your favorite pasta, with sausage on the side.

This recipe is a labor of love, requiring patience and dedication to achieve its full potential. The slow simmering of the meats ensures that every bite is infused with rich, savory flavors that will transport you to the Italian countryside with each mouthful. Feel free to customize this recipe to your liking, adding more meats or adjusting the seasonings to suit your palate. Serve it over al dente pasta for a comforting meal that is sure to satisfy even the heartiest of appetites. Enjoy the Carnivoro Pasta Sauce with family and friends, and savor the joy of good food and good company. Buon appetito! ๐Ÿ‡ฎ๐Ÿ‡น๐Ÿด
