Ingredients:

| 1/2 cup | Pepperoni, diced |

Instructions:

Preheat Oven: Heat your oven to 400 degrees Fahrenheit (200 degrees Celsius). 
- 
Prepare Muffin Pan: Line a 12-cup muffin pan with paper baking cups. 
- 
Prepare Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, diced pepperoni, Parmesan cheese, baking powder, Italian herb seasoning, and salt. 
- 
Mix Wet Ingredients: In a separate smaller bowl, beat together the milk, pizza or spaghetti sauce, olive oil, and eggs until well combined. 
- 
Combine Wet and Dry Ingredients: Pour the wet ingredients mixture over the dry ingredients mixture. Stir just until moistened. Be careful not to overmix.

Fill Muffin Cups: Divide the batter evenly among the prepared baking cups. 
- 
Bake: Place the muffin pan in the preheated oven and bake for about 20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool: Once baked, transfer the muffin pan to a wire rack and let it cool for about 10 minutes.

Remove and Cool Completely: Remove the paper baking cups from the pan and allow the muffins to cool completely on the wire rack.

Freeze (Optional): If you’d like to freeze the muffins for later use, wrap the cooled muffins individually in plastic wrap and then in foil. They can be frozen for 2-3 months.

Thaw: To thaw a frozen muffin, simply place it in a lunchbox at room temperature. It will thaw in approximately 3 hours, ready to enjoy!
