Prepare Glaze: - In a medium saucepan, combine 3 cups of water, granulated sugar, and strawberry gelatin.
- Bring the mixture to a boil, stirring occasionally.
- In a small bowl, gradually mix the remaining 1 cup of water into cornstarch until smooth.
- Add the cornstarch mixture to the saucepan, whisking constantly with a wire whisk.
- Cook over medium heat, stirring frequently, for about 5 minutes or until the mixture is thick and fairly clear. (Stir constantly for best results).
- Stir in red food coloring.
- Remove from heat and let the glaze stand at room temperature to cool. Do not refrigerate.

- In a large bowl, combine the strawberries with 2 cups of the prepared glaze. Gently mix to coat evenly.

- Spoon half of the remaining glaze over each pie, smoothing and sealing the glaze to the edge of the crust with a spoon.
- Refrigerate the pies for at least 2 hours to set.
