1 Egg
1 1/2 Self-raising flour

1 – 2 Hot water (for icing)

Instructions:

  1. Preparation: Begin by greasing a 19cm x 29cm slice pan and lining the base with baking paper.

  2. Melt Butter and Golden Syrup: In a small pan, melt the butter and golden syrup together over low heat. Alternatively, you can carefully melt them in the microwave on a low setting. Stir well to combine.

  3. Combine Dry Ingredients: In a large bowl, sift together the self-raising flour and ground ginger. Add the chopped crystallized ginger, caster sugar, and coconut to the bowl.
