Ingredients:

  • 1/2 cup sweet unsalted butter
  • 1 tsp vanilla extract
  • 1 cup cake flour
  • 1 egg
  • 1/8 tsp salt
  • 1 cup ground pecans
  • 2-3 cups powdered sugar

Instructions:

Step Description
1. Preheat oven: Preheat your oven to 350°F (175°C).
2. Cream butter: In a mixing bowl, cream the unsalted butter until smooth and creamy using an electric mixer.
3. Combine dry ingredients: Using a wooden spoon, stir in the cake flour, vanilla extract, egg, and salt until well mixed. Avoid using the electric mixer at this stage to prevent the dough from becoming too tough.
4. Incorporate nuts: Stir in the ground pecans until evenly distributed throughout the dough.
5. Shape dough: Shape the dough into 30 small balls and place them on parchment-lined baking sheets.
6. Bake: Bake the cookies in the preheated oven at 350°F (175°C) for 10 minutes. The cookies may appear to be sitting in puddles of melted butter as they bake – this is normal. Rotate the trays in the oven and continue baking for another 5-10 minutes, or until they just start to turn golden.
7. Coat with powdered sugar: While the cookies are still hot, roll them in powdered sugar until evenly coated.
8. Cool: Allow the cookies to cool completely on a wire rack.
9. Second coating: Once cooled, roll the cookies again in powdered sugar to give them an extra coating.
