Ingredients

  • 1 package angel hair pasta
  • 1 jar sun-dried tomato pesto
  • 1 pound boneless chicken breast, cut into strips
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, sliced

Instructions

Step Description
1 Cook the angel hair pasta according to the package directions. Once cooked, toss the pasta with 3 tablespoons of sun-dried tomato pesto sauce. Place on a platter and cover to keep warm.
2 Season the chicken strips with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Cook the chicken strips for about 5 minutes, or until cooked through. Remove the chicken from the skillet and set aside.
3 In the same skillet, add the sliced red and orange bell peppers along with the red onion. Cook for about 8 minutes, stirring occasionally, until the vegetables are tender. Add the sliced zucchini and cook for an additional 8 minutes, or until all vegetables are tender-crisp.
4 Return the cooked chicken to the skillet with the vegetables. Stir in the remaining sun-dried tomato pesto sauce. Toss everything together gently to combine.
5 Serve the chicken and vegetable mixture over the prepared angel hair pasta. Optionally, garnish with freshly grated Parmesan cheese and chopped fresh basil for extra flavor.
