Indonesian Tongseng Ayam Recipe

Ingredients:

  • 1/4 kg small pieces of chicken
  • 1 tomato, diced
  • 1 small bunch of Chinese cabbage (sawi putih), chopped
  • 4 kaffir lime leaves
  • 2 bay leaves
  • 1 onion, sliced
  • 1 lemongrass, pounded
  • Soy sauce, to taste
  • Sugar and salt, to taste

Ground Spices:

  • 5 shallots
  • 2 cloves garlic
  • A small piece of ginger
  • 1/2 tsp coriander seeds
  • 3 candlenuts

Instructions:

  1. Heat some oil in a pan. Sauté the sliced onion until slightly wilted.
  2. Add the ground spices and continue sautéing until fragrant.
  3. Add the chicken pieces and cook until they change color.
  4. Pour enough water to cover the chicken. Add kaffir lime leaves, bay leaves, and lemongrass. Simmer until the chicken is tender.
  5. Add diced tomatoes and Chinese cabbage. Cook until the vegetables are tender but still crisp.
  6. Season with soy sauce, sugar, and salt according to your taste preference.
  7. Serve hot with steamed rice.
