Indonesian Tongseng Ayam Recipe
Ingredients:
- 1/4 kg small pieces of chicken
- 1 tomato, diced
- 1 small bunch of Chinese cabbage (sawi putih), chopped
- 4 kaffir lime leaves
- 2 bay leaves
- 1 onion, sliced
- 1 lemongrass, pounded
- Soy sauce, to taste
- Sugar and salt, to taste
Ground Spices:
- 5 shallots
- 2 cloves garlic
- A small piece of ginger
- 1/2 tsp coriander seeds
- 3 candlenuts
Instructions:
- Heat some oil in a pan. Sauté the sliced onion until slightly wilted.
- Add the ground spices and continue sautéing until fragrant.
- Add the chicken pieces and cook until they change color.
- Pour enough water to cover the chicken. Add kaffir lime leaves, bay leaves, and lemongrass. Simmer until the chicken is tender.
- Add diced tomatoes and Chinese cabbage. Cook until the vegetables are tender but still crisp.
- Season with soy sauce, sugar, and salt according to your taste preference.
- Serve hot with steamed rice.
