Warm Salad of Duck with Sesame and Ginger

Ingredients:
- 2 duck breasts
- 2 tablespoons sesame seeds
- 1 piece preserved gingerroot, finely chopped
- 3 tablespoons ginger syrup
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 plums, pitted and sliced
- Mixed salad leaves
- 2 tablespoons vegetable oil, divided
- 1 teaspoon sesame oil
Instructions:

Prepare the Duck:
- With a sharp knife, make slashes in the duck skin about 1/8 inch apart.
- Heat 1 tablespoon of vegetable oil in a frying pan over medium-high heat.
- Place the duck breasts in the pan, skin side down. Cook for about 3 minutes until the skin is crispy and a lot of fat has been rendered out.
- Pour off excess fat from the pan, then flip the duck breasts and cook for another 3 minutes until the other side is well browned.
- Remove the duck breasts from the pan and let them rest for a few minutes before slicing thinly.

Prepare the Dressing:
- In the same pan, add sesame seeds and toast them lightly until fragrant.
- Add the finely chopped preserved gingerroot and ginger syrup to the pan, followed by sesame oil, remaining vegetable oil, and lime juice.
- Whisk the dressing well, seasoning with salt and black pepper to taste.

Assemble the Salad:
- Add the sliced duck breasts and sliced plums to the dressing in the pan.
- Heat through gently, tossing to coat the duck and plums with the dressing.

- Arrange mixed salad leaves on serving plates.
- Spoon the warm duck, plum, and dressing mixture over the salad leaves.
- Serve immediately, ensuring each plate has a good balance of warm duck, sweet plums, and crispy salad leaves.
