Ingredients:

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg, separated
  • 1/2 cup light brown sugar
  • 1/2 cup unsweetened applesauce
  • 2 tbsp canola oil
  • 1 tsp vanilla extract
  • 3 tbsp mini chocolate chips, divided

Instructions:

  1. Preheat Oven and Prepare Muffin Tin:
    Preheat your oven to 400°F (200°C). Coat a 12-hole muffin tin with cooking spray.

  2. Prepare Dry Ingredients:
    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. Separate Egg and Prepare Wet Ingredients:
    Separate the egg, placing the egg white in a medium bowl and the yolk in a large bowl. Set the egg white aside for later use.

  4. Mix Wet Ingredients:
    To the egg yolk in the large bowl, add the light brown sugar, unsweetened applesauce, canola oil, and vanilla extract. Mix with a wooden spoon until well blended.
