Golden Spiced Smashed Chicken with Fiery Sambal

Ayam Penyet (Smashed Fried Chicken)

Ingredients:

  • 1/4 kg chicken
  • 4 shallots
  • 2 cloves garlic
  • 1 segment turmeric
  • 1 segment ginger
  • 1/2 tbsp coriander
  • 3 kaffir lime leaves
  • Salt
  • Seasoning powder
  • Cooking oil
  • Water

Sambal Ingredients:

  • 10 bird’s eye chilies
  • 5 curly red chilies
  • 1 tomato
  • 4 shallots
  • 2 cloves garlic
  • Kaffir lime juice
  • Granulated sugar
  • Salt

Steps:

  1. Prepare the Ingredients:

    • Rinse the chicken thoroughly and marinate with salt. Set aside.
    • Prepare the spice paste by grinding shallots, garlic, turmeric, ginger, coriander, and tearing the kaffir lime leaves.
  2. Cook the Chicken:

    • Mix the spice paste with the chicken, ensuring it’s evenly coated. Add water until the chicken is submerged. Add torn kaffir lime leaves. Cook the chicken until the water evaporates.
  3. Prepare the Sambal:

    • Fry all sambal ingredients except the kaffir lime until wilted. Before frying, add sliced tomatoes and bird’s eye chilies to prevent them from exploding. Set aside and crush coarsely after frying.
  4. Fry the Chicken:

    • Fry the marinated chicken in hot oil until golden brown. Add a little hot oil to the crushed sambal. Place the fried chicken in a mortar, smash it with sambal, and add kaffir lime juice. Serve.
