Indonesian Ayam Kecap Recipe

Ingredients:

  • 250 grams chicken, cut into pieces
  • 6 shallots
  • 3 cloves garlic
  • 2 red chilies
  • 15 bird’s eye chilies
  • Galangal (Indonesian: lengkuas)
  • Ginger
  • Bay leaves (Indonesian: daun salam)
  • Lemongrass (Indonesian: sereh)
  • Sweet soy sauce (Indonesian: kecap manis)
  • Seasoning (such as salt and pepper)
  • Cornstarch (to thicken the sauce)
  • Water

Instructions:

  1. Boil the Chicken: In a pot, boil the chicken pieces until cooked through. Drain and set aside.

  2. Sauté Aromatics: In a pan, sauté shallots, garlic, red chilies, and bird’s eye chilies until fragrant.

  3. Add Spices and Herbs: Add a little water to the sautéed mixture. Add ginger, galangal (crushed), bay leaves, and lemongrass. Pour in enough water to cover the ingredients.
