Crispy Snapper with Sweet Soy Sauce Sambal

Ingredients

  • 250 grams snapper
  • 1 lime or lemon
  • Multipurpose seasoning flour (recommended: Sajiku)
  • For the Sweet Soy Sauce Sambal:
    • 4 tablespoons sweet soy sauce (adjust to taste)
    • 10 bird’s eye chilies
    • Salt, to taste
    • Oil, as needed for sautéing and frying

Steps

  1. Preparation:

    • Thoroughly clean the snapper, then coat it with lime or lemon juice to eliminate any fishy odor. Rinse the fish again under running water.
  2. Coating the Fish:

    • Divide the multipurpose seasoning flour into two portions. For the wet batter, mix 1 tablespoon of the flour with 4 tablespoons of ice-cold water. Keep the remaining flour dry.
    • Dip the snapper into the wet batter, ensuring it is well-coated. Then, roll the fish in the dry flour, pressing gently to ensure an even coating.
  3. Frying the Fish:

    • Heat oil in a frying pan over medium-high heat. Once the oil is hot, fry the coated snapper until it turns golden brown and crispy. Remove the fish from the oil and let it drain on paper towels to remove excess oil.
  4. Preparing the Sambal:

    • Place the sweet soy sauce in a small bowl.
    • In a small pan, heat some oil and sauté the bird’s eye chilies until fragrant. Transfer the chilies along with the oil into the bowl of sweet soy sauce.
    • Add a pinch of salt to the sambal and stir well. Taste and adjust the seasoning if needed.
  5. Serving:

    • Serve the crispy snapper hot with the sweet soy sauce sambal on the side.
