Fragrant Chicken Soup (Sup Ayam)

Ingredients:

  • 250 grams chicken, cut into pieces
  • 700 ml water
  • 1 carrot, diced
  • Salt and chicken powder to taste
  • 1/4 whole nutmeg
  • 1 piece of ginger, lightly crushed
  • Sliced ​​spring onion, sliced ​​celery, and fried shallots for garnish

Spice Paste:

  • 5 cloves garlic
  • 2 shallots
  • 1/2 tsp ground pepper

Instructions:

  1. Boil the Chicken: In a pot, bring the chicken to a boil with water. Discard the first boiled water.

  2. Second Boil with Spices: Add the crushed ginger and whole nutmeg to the pot with the chicken. Bring to a boil again.

  3. Prepare Spice Paste: In a separate pan, sauté the garlic, shallots, and ground pepper until fragrant.

  4. Combine Ingredients: Add the sautéed spice paste to the boiling chicken broth. Include the diced carrots. Season with salt and chicken powder. Cook until the carrots are tender and the flavors have melded. Adjust seasoning to taste.

  5. Serve: Garnish with sliced spring onion, celery, and fried shallots. Serve hot.
