Description:

This delightful variation of tortilla soup, courtesy of my sister Liz (with a few personal tweaks), features the magic touch of green enchilada sauce, imparting a delightful heat and spice to warm you up. It’s perfect for cozy evenings or anytime you crave a bowl of comforting goodness.

Ingredients:

  • 3 chicken fillets
  • 1 onion, diced
  • 1 can (14 oz) chicken broth
  • 1 can (4 oz) diced green chilies
  • 1/2 cup diced garlic
  • 1 cup shredded Monterey Jack cheese
  • 2 ripe avocados, sliced
  • 2-3 cups tortilla chips, crumbled
  • 1 tablespoon olive oil

Instructions:

  1. Prepare the Chicken:

    • Rub the chicken fillets with fajita seasoning mix.
    • In a skillet over medium heat, brown the chicken fillets on each side until cooked through.
    • Remove from skillet and allow to cool. Once cooled, cut the chicken into bite-size pieces.
  2. Saute the Vegetables:

    • Add 1 tablespoon of olive oil to the skillet.
    • Saute the diced onions, garlic, and diced green chilies until the onions are translucent and fragrant.
  3. Combine Ingredients:

    • Transfer the sauteed mixture to a large saucepan.
    • Add the green enchilada sauce, chicken broth, Mexi-Corn (if using), and the prepared chicken pieces.
    • Season with salt and pepper to taste.
  4. Simmer:

    • Bring the soup to a boil, then reduce the heat to low.
    • Allow the soup to simmer gently for 1/2 hour to 1 hour, allowing the flavors to meld together beautifully.
  5. Serve:

    • Ladle the hot soup into bowls.
    • Top each serving with shredded Monterey Jack cheese, crumbled tortilla chips, and sliced avocado.
