Golden Marinated Chicken (Ayam Ungkep Kuning)
Ingredients:
- 1/2 chicken, cut into pieces
- 5 shallots
- 5 cloves garlic
- 5 cm turmeric
- 1 tsp coriander seeds
- 1 tsp pepper
- 4 candlenuts
- 1 cm ginger
- 5 cm galangal
- 2 kaffir lime leaves
- 2 bay leaves
- 1 lemongrass stalk
- 2 tsp salt
- 1 tsp sugar
- About 500 ml water
Instructions:

Grind shallots, garlic, coriander seeds, pepper, candlenuts, turmeric, ginger, and galangal into a smooth paste.

Clean and cut the chicken into pieces. Place in a pot and add the ground spice paste. Pour in water, enough to cover the chicken. Cook over medium heat.

Add kaffir lime leaves, bay leaves, and lemongrass stalk to the pot.

After about 15 minutes, add sugar and salt. Continue cooking for another 10 minutes or until the liquid reduces significantly. Remove from heat.

Allow the chicken to cool down. Transfer to a container and store in the refrigerator until ready to fry.

When ready to serve, heat oil in a frying pan and fry the marinated chicken until golden brown and cooked through.

Serve hot with steamed rice or your favorite side dishes.
