Spicy and Sour Mackerel (Ikan Kembung Asem Pedas)
Ingredients:
- 2 medium-sized mackerels (ikan kembung)
- Red chilies, to taste
- Bird’s eye chilies, to taste (add more if you prefer it spicier)
- Shallots
- Garlic
- 1 tomato
- Ginger, to taste
- Tamarind water, to taste
Steps:
- Begin by cutting each mackerel into three pieces. If the mackerel is large, you might need to adjust the size accordingly.
- Sauté the shallots and ginger until fragrant. Add the chopped chilies and tomatoes, and continue to sauté until the mixture is aromatic.
- Once the ingredients are well sautéed and aromatic, add the tamarind water along with a bit of additional water to create the broth.
- Add the mackerel pieces to the pot and cook until the fish is fully cooked through. Season the dish with salt, monosodium glutamate (optional), and sugar to taste.
- Once the fish is cooked and the flavors are well combined, remove from heat and serve hot.
