Fragrant Pandan Chicken (Ayam Ungkep Pandan)
Ingredients:
- 1 whole chicken, cut into pieces
- 1 packet fried chicken seasoning mix
- 2 stalks lemongrass, bruised
- 4 bay leaves
- 1 piece galangal, bruised
- 2 pandan leaves, sliced into 3 pieces each
- Coriander powder, to taste
Spice Paste:
- 4 cloves garlic
- 4 shallots
- 2 small pieces turmeric
- 4 candlenuts
- 4 red chilies
- Salt and seasoning, to taste
- Sufficient amount of water and cooking oil
Instructions:

Heat cooking oil in a pan. Sauté the spice paste, lemongrass, bay leaves, and galangal until fragrant. Add pandan leaves.

Add the chicken pieces and stir until the spices are well distributed. Pour in enough water to cover the chicken.

Add the fried chicken seasoning mix and coriander powder. Season with salt and additional seasoning to taste. Stir well.

Simmer until the liquid reduces and thickens, coating the chicken pieces evenly. Alternatively, continue cooking until the liquid evaporates and the chicken is dry.

Serve the chicken while still moist with a bit of sauce or after frying it until golden brown for a crispier texture. Both ways are delicious when paired with steamed white rice.
