  2. Prepare the Spice Paste: While waiting for the water to boil for the second time, sauté the blended spice paste until fragrant. Add bay leaves, kaffir lime leaves, and lemongrass. Sauté until aromatic.

  3. Cooking the Soup: Once the water boils and the spice paste is cooked, add the spice paste to the boiling water. Let the chicken simmer in the soup (you can add chicken feet for extra flavor).

  4. Seasoning: Add a bit of sugar, salt, and mushroom broth powder to taste. Adjust the seasoning as needed.

  5. Prepare the Chicken: Once the chicken is cooked in the soup, remove it and briefly fry it until just browned. Do not overcook. Drain and shred the chicken.

  6. Prepare the Vegetables: Briefly blanch the cabbage and bean sprouts. Soak the rice vermicelli in hot water until softened, no need to boil.

  7. Boil the Eggs: Boil the eggs for 15 minutes.

  8. Assemble: In serving bowls, place the rice vermicelli, cabbage, bean sprouts, and eggs. Slice the tomatoes as desired and add shredded chicken.

  9. Final Touch: Sprinkle with spring onions and fried shallots. Pour the hot soup over the prepared ingredients in the bowls.

  10. Serve: Your Soto Ayam is ready to be enjoyed!
